Pies with that- Apple Pie a La Mode!

I struggled for a bit thinking about how to make a fashionable pie... lots of meringue? a fancy top crust design? modern fusion ingredient combinations.. and then it hit me.. some things never go out of fashion.. Apple pie..



and to top it off.. i make it a la mode- literally meaning in the fashion.. So here is my entry for this month.. apple pie a la mode.

oh yeah its even low cal!

crust:

1 cup ap flour

3 T sugar

1/2 t baking powder

1/4t salk

3 T cold butter cut into 6 pieces

1 large egg

1 T cold water

Combine all dry ingredients in food processor (or stand mixer) to mix. Add butter and mix until combined. Add egg and water and and mix until dough forms a ball. Turn out , form disc and let rest wrappen in plastic in fridge for 2 hours -3 days. Roll out on floured surface and press into tart pan.

apple filling:

3 large apples

2 T sugar

1/2t cinamon

peal apples, halve and core them and cut into 1/4inch slices. arrange around outside edge, leaving one apple for center. mix sugar and cinammon together and sprinkle over apples

bake 40-45 minutes at 350 F until crust is baked and apples bubbling

cool in pan on rack.

apricot glaze:

1/2 cup apricot preserves

2T water

above heated and strained if needed until thick. paint glaze over apples. unmold tart and serve with your favorite ice cream!
