This Weeks recipe looked very good as ice cream bars, so I decided to go with that. I always thought that Heath bars were very english, yet here i am in England and the only thing I could find with toffee were very large thorntons chocolate covered toffee bits. you can see them there sorta not melted on top. Lets just say they made for very good jaw calisthenics!
Once they were made into ice cream bars it was very tasty, but just too much! the cookie/shortbread bit was super hard (I kinda felt like my dog trying to get at the marrow of a bone) Full marks for taste on this one, but maybe not so pratical as an ice cream bar.

I keep seeing that it was a bit hard on the teeth as an ice cream sandwich. IT looks good though, with all that ice cream coming out of it! Nice job.
Ah well. Licking the ice cream from the side is part of the fun.
Oh...your sandwich looks wonderful.
Maybe you baked yours to long? Mine was still 'soupy' in the center, but it was bubbling and percolating away...just like Dorie said, so I pulled them out.
Hahah they were definitely hard to eat as an ice cream bar! But WOW do yours look good!
I love the messey gooey ice cream bar. These were really good with ice cream, but hard to eat in ice cream sandwich form.
now that's an ice cream sandwich! they look great. i just recently had dental work done so i really thought these were tough to eat! delicious though.
I've read on several other blogs that the cookies were too hard to eat with ice cream - such a shame! Sorry it didn't work out.
